What We're Eating This Week.....

This week we are going to have quiche with lots of yummy veggies. Another night I plan to make a beef roast in the crockpot. I've been pinning some yummy casseroles and easy crockpot meals. I'm always on the lookout for good crockpot meals for chicken. If you know one, pass it my way!

What I'm Reminiscing About....
I don't know if anyone else gets like this but I've been having a hard time with fact that I'm nearing the age of 32. I really do feel stuck at 25. When did I get so old?!? So my reminiscing has been all about my middle to late twenties and all the wonderful experiences that I had. I sure was lucky to travel (USA and around the world) and spend time with family and friends near and far! I guess my 30's have cemented to me the fact that I am actually GROWN up. Does that translate to boring? I hope not. 

What I'm Loving.....
Our beautiful city in the fall! Josh and I drove up to the mountains this weekend and the colors didn't even compare to the ones on the trees around Charlotte. I've been sitting on my porch, driving with the windows down and checking off the boxes of my fall bucket list! As much as this girl loves CHRISTMAS, I'm savoring this last little bit of fall before the season changes. 

What we've been up to......
I feel like everyone has been pretty caught up in this regard! Not much has changed since Friday! ha!

What I'm dreading.....
I'm dreading the inevitable. Each week I watch one of two of my kiddos come down with something, so I know it's only a matter of time before I get it too. I just got over a nice case of  an upper respiratory infection. Ugh. I know I should probably get a flu shot, just skeptical of whether they really work or not. I've never gotten one before (the flu I've only gotten once in my life...knock on wood). In the meantime we sanitize, sanitize, SANITIZE. I continue to model how to cough in your elbows, blow your noses with tissues (yes...I teach how to use a tissue believe it or not...) and wash your hands really good with soap and water. And no digging for gold. Yuck.

What I'm working on....
I'm working on decluttering our house one room at a time. It's a project...a never ending project. One that I have to pull tooth and nail to get my hubby to help with. Ha! Another thing I'm working on is learning some new Christmas piano pieces and picking out choral music for church. Both things that I enjoy. I also need to get cracking on some sewing projects. One of my upstairs bathrooms needs a new valance. I'm excited about any project that leads me to Mary Jo's fabrics! If you are local and have not ventured to Mary Jo's...you have not lived. Oh my word. Fabric heaven. 

What I'm excited about....
I'm excited that in about 22 days I'll be enjoying the beautiful beaches of Siesta Key, Florida. Our family has spent many Thanksgivings at the beach. It's probably my favorite place to spend the holidays. Siesta Key is on the gulf side of Florida, so the beaches have the whitest, softest sand and the water can still be pretty warm in November. I love to lay out and catch up on reading. We all love to take early morning and sunset walks on the beach. The past couple years we have rented bikes and pedaled to town and the beach. Sarasota is also close by and it has some of the best shops and restaurants!

What I'm watching/reading....
Josh and I have recently discovered the show The Last Man on Earth. It's pretty funny. It's about a guy who survived an epidemic that wiped out the world's population. I'll leave you there. Check it out!

As far as reading, I'm making a list of books that I'd like to read over Thanksgiving break. These are a few that are on the list. Some of them are new and some are re-reads. You know.. the kind of book you love so much that it warrants a once a year read. 

  
  

What I'm listening to.....
It's officially Christmas music season in the Lindstedt house. In the car, at home, in the classroom. All day long. Never gets old. (I know..your shaking your head at me and calling me a weirdo.) Mainly classical Christmas stuff without words. I can only handle the typical Bing Crosby, Grinch, All I want for Christmas kind of music in December. Yes...I'm a picky Christmas aficionado.

What I'm doing this weekend....
Celebrating my sweet hubby's birthday! It's actually Thursday but we probably won't have a chance to celebrate until the weekend. He HATES making a big deal out of his birthday. I on the other hand love birthdays, so he just has to deal with it. I'm so glad he's mine!

What I'm looking forward to next month...
Thanksgiving break obviously. I also love November as a teacher because it's so fun to watch my kiddos learn about the Pilgrims and Native Americans. There are so many fun activities that we do with that unit. I also am looking forward to doing the She Reads Truth thanksgiving devotional on the app. It's one of my favorites every year. We truly have so much to be thankful for and it's nice to spend a little time each day thinking about our blessings.
